John Winnik, director of Lynx Restaurants Ltd and new owner of Leith Lynx has with the support of his wife, Kelly, and two young children; set out to provide good honest fresh food to the residents and visitors of Edinburgh.

When you visit though you will probably not see John, as he will be your chef, providing you the finest foods that he can from his
ever-changing menus.

During the past 17 years, working in some of the best restaurant in Edinburgh, John has always strived to be the best and has the most amazing passion for good fresh food. He loves using local produce as often as possible and always has a keen eye for the best seasonal produce available.

John’s eldest daughter was diagnosed with Coeliac Disease when she was just 18 months old. Eating out on a gluten free diet has proven to be quite difficult, especially for a child, and this issue has given John even more inspiration to open a restaurant who you can trust to provide a safe gluten free meal. He has spent the last 4 years creating dishes and perfecting recipes that do not contain gluten. One of his hopes for the future is that most of his menu will be gluten free.
